The Sheldon's Milk Chocolate Brownies

Seriously you guys these are soooo good. I never like homemade brownies. I could eat the whole pan of these.


2 C sugar
2 C flour
1 C softened butter
4 eggs
1.5 C Nestle quick or other cocoa mix
2tsp vanilla

Bake at 325 for 40 to 45 mins.








Aunty Jeannie's Energy Bars

1/2 block butter
1 10oz pkg small marshmallows
1/2 C peanut butter
Melt on med heat in teflon pan stirring constantly

In large tupperware bowl combine:
3 1/2 C rice krispies
1 C raisins or craisins
1 C sunflower seeds
2 C quick cooking oats
1 C unsalted peanuts

Add melted mixture. mix quickly. pour into buttered 9 X 13 pan. press down with wax paper. cool and cut into bars. wrap in wax

Mint Brownies

Heat oven to 350 degrees.
Grease 9x13 pan.
12 servings - but they would be large servings.

Brownie****
1 cup flour
1 cup sugar
1/2 cup butter
4 eggs
1 1/2 cups Hershey's syrup

Beat until smooth. Pour into prepared pan. Bake 25 to 30 minutes. Cool completely.

Mint Cream
2 cups powdered sugar
1/2 cup butter (butter is much better in this part)
1 Tbsp water
3/4 tsp. peppermint extract
3 drops green food coloring

Beat until smooth. Spread on cooled brownies. Chill.

Chocolate Topping
6 Tbsp margarine (for some reason the marg. just works better for the topping)
1 cup semi sweet chocolate chips

In a small saucepan, over very low heat, melt margarine and chocolate chips. Remove from heat, stir until smooth. Cool slightly. (just a couple minutes) Pour over the mint cream, cover, and chill.


****I don't ever do the brownie from scratch. Betty Crocker is my friend. I use 3 eggs instead of two when I make the brownies. And, if you are in a rush, just throw the parts in the freezer to chill while you melt the chocolate or whatever, then chill it well at the end.

Spicy Chicken Rigatoni Eh'

I kind of made this up - had a variation of this from a couple of restaurants

Bake Two or Three Chicken breasts that are seasoned with garlic, salt, pepper and italian seasoning
Saute garlic and red pepper flakes in oil, add onions, mushrooms and tomato sauce, turn heat down
Add three quarters of a can of evaporated milk
Cook the rigatoni or butterfly noodles
Toss the noodles and sauce and then add more red pepper flakes

Piece of cake to make and pretty tasty too.

Buffalo Chickpea Salad

Go to Perry's Plate and make the Buffalo Chickpea Salad.
Good stuff. I messed up the peas a bit, they weren't crunchy, but it was still really good. My only thing is I added a lot more of the sauce to make it spicy, but that probably depends on the sauce you buy.

Cinnamon Popcorn...

Oh my gosh you guys. This is the most delicious stuff ever!! I am totally obsessed with cinnamon hearts this time of year...as I have mentioned before. Rich's friend at work gives us something like this every year at xmas. I have been begging him to get the recipe for a year and 5 weeks. I finally gave up and got one online. It is from cdkitchen.

Make it...mmm. Then pretend I dropped it on your door on the 14th.

5 qts popped popcorn (After popping, place popcorn in a large roasting pan)
1/2 cup butter or margarine
1/2 cup granulated sugar
1/2 tsp salt
1/4 cup light corn syrup
3/4 to 1 cup red hots cinnamon candies
1/4 tsp baking soda

Melt margarine in medium saucepan. Stir in sugar, corn syrup, salt and cinnamon candies. Bring to a boil; continue boiling, stirring constantly until candies are dissolved completely.

Boil without stirring 3 minutes. Remove from heat; stir in baking soda. Pour over popped popcorn, mixing well in a large roasting pan. Bake at 250° for 30-45 minutes, stirring every 15 minutes.

Immediately turn out onto waxed paper to cool.
After cooled, break apart. Store in airtight containers.

Shrimp Creole

On the easy theme - this is a fast and easy dinner.
1 pound of shrimp - fresh or frozen up to you (whatever is on sale)
2 cans diced tomato
1 onion diced
4 cloves garlic
1 green pepper diced
3 bay leaves
4 celery stalks chopped
2 cups cooked rice

cook garlic and onion with 1 Tbs of butter, then add pepper and celery.
Add tomatoes and bring to a boil.
Add bay leaves and Shrimp
Simmer 20 minutes
Remove the Bay Leaves or give to Duane to eat for a buck
Serve over rice
Get the kids to do the dishes
Have a great night
